TOPPING:
1/4 c. chopped walnuts
1/4 c. brown sugar, firmly packed
1 Tbsp. flour
1 tsp. cinnamon
2 Tbsp. melted butter
CAKE BATTER:
1 c. pastry flour
1/2 tsp. salt
1/2 c. white sugar
1 egg
1/2 c. milk
1/4 c. butter, melted
1 1/2 tsp. baking powder
Pre-heat oven. Grease and line the bottom of an 8-inch square pan with parchment paper.
Prepare cake topping. Put chopped nuts, brown sugar, 1 Tbsp flour, cinnamon, and butter in a bowl. Mix gently and set bowl aside.
Prepare cake batter. Sift and then measure 1 c. flour. Add baking powder, salt and white sugar to flour and sift ingredients into a mixing bowl.
In a second bowl, beat egg and add milk and melted butter.
Add liquid ingredients to sifted dry ingredients. Mix until moist, about 8 or 10 strokes.
Turn batter into cake pan and sprinkle topping over the batter.
Bake at 375°F for 20 minutes.
I like to double the topping recipe. It works well.
All-purpose flour works too.
